Beloved has a secret, guilty pleasure. He watches “Barbecue Pit Masters” when he thinks we are all busy.  Not that I blame him, fire and a slab of beautiful meat strikes a primal chord in all of us. I set out to reproduce some of the delectable dishes I’d seen him drooling over. Lacking a smoking pit, or a full day to pamper and fuss over the slab of meat I brought home from the Butcher, I cheated. The results would have a Pit Master sniffing disdainfully at my claim to Barbecue Ribs .. but I bet they’d come back for seconds once they’d tried it. Beloved certainly did 🙂

Sometime ago I wrote of Beloved’s famous Stroganoff, and gave you my meatballs version. This is the original in all of its glory. On face value it’s chunky and bucolic, but each delectable morsel has its own subtly layered flavours that blend together into an exquisite whole. Enjoy with buttered noodles and the rest of the bottle of wine you cook it with. Choose a full bodied wine for this, one with a slightly acid finish, such as a Merlot or Cabernet.

I had to make this about six times before I managed to get a photo.  The original version is slow-cooked in the oven, something I rarely have time to do, so I have included both the cheats and portion-for-one versions below. It’s a sweet, tangy dish with a hidden surprise.

The lemon slices caramelize and take on an intense flavour that had the Junior Sorority puckering their faces (and me gleefully claiming all the rejected morsels). If there are likely to be Greek Tragedies in your home, leave out the lemon slices and increase the juice a little. Similarly if the inclusion of spinach will cause rioting in the streets, use beans or snowpeas.

Kecap manis is a thick, sweet soy sauce from Indonesia available from either a good Asian food retailer or your local supermarket.

I love the internet .. well most of the time anyway. I went looking for a way to utilise the mid Autumn glut of Tomatillos in a creative contribution to a party supper. This is my adaptation of one of Zarela Martinez recipes, recommended to accompany grilled meats, chicken and fish. Complex, rich flavour .. warm, spicy and slightly acid .. had us all instant addicts. Certainly the large bowl intended for the party never made it out the door. Judging from the contented expression worn by my hitherto avocado-pathic Littlest Angel as she scooped it into her mouth with corn chips, there may just be mutiny in the ranks if I make Guacamole any other way.

This began it’s life as an emergency measure to use up a batch of unusually loosely set jam. It was an instant hit with the Junior Sorority as a lunch-box filler, and Beloved as an on-the-run breakfast substitute. It’s appeal for me is its good nutritional value, and high fibre content. The ease and speed that a batch or two comes together is also a definite bonus. Low mess, low fuss easily qualifies as a cheat.
