I needed a photo of my quick and easy pizza dough. Each time I had made it, either the dough got used, or the pizza vanished before I could get a suitable shot taken. I happened to be roasting some pork at the time, and wanting an alternative to potatoes as a side dish. Having lovingly described the process of making a herbed, cheesy crust pizza, it wasn’t much of a leap to decide to experiment by slathering the top of the dough with cheesy goodness. The results were spectacular!! Melt in the mouth spectacular. I think I just found another family favourite (and my bring-a-plate for the next Barbeque)

A tasty, healthy variant on classic Hummus. Arranged on a platter with Muhammara, toasted pita bread, olives, dukka and crumbled feta, you have an exotic offering for a party (or party for one!) This is quite a thick hummus. If you prefer yours a little runnier, add extra olive oil, lemon juice, or some of the liquid from the boiled or canned chickpeas.

Ham (or bacon) and potatoes are the best of friends, the Thelma and Louise of the culinary world without the tragic ending. The starchiness of the potatoes compliments salty, porky, slightly fatty flavours from the cured meat. Sharp cheese and cream complete the flavour profile perfectly. Serve this with pretty much anything roasted, grilled or barbequed .. even a clear broth stew.

This dish is simplicity itself to make, requires no special equipment or ingredients and lends itself to endless variations. It’s a favourite bring-a-plate to meat-heavy Barbeques. Add plenty of thyme  to accompany a richly flavoured roast such as venison, beef or mutton.  I add thyme and orange zest to accompany Tarragon Chicken. Sage, extra onion and crushed garlic to make a side dish for roast chicken, veal or turkey. You can even add bacon, ham and/or leftover roast chicken to turn this into a Main Meal 🙂  The crushed nuts or almond meal are optional too (although they do make a nice sweet crunchy crust.

This is a truly epic side-dish for roast pork, veal or chicken. It’s also a welcome bring-a-plate to a BBQ or potluck party. The rich, tart-sweet flavour, contrasting textures and delicious bloody-purple colour delight all the senses. I like to reserve a few of the onions and blend them into a gravy.  Any leftovers brighten up the most boring salad.
