There are distinct nutritional benefits from eating whitefish such as Flake, Hake and Tilapia. They are packed with phosphorous, selenium, zinc and magnesium as well as B Group vitamins, especially B12. They are also very often cheaper than their darker, oilier cousins, but are (sadly) usually sold frozen, a process that ruins the soft, delicate texture of the meat. At the market today I found some delightful, super fresh Flake (shark) so I pounced on it with glee. This is my favourite, low fuss, low mess way to cook it .. and it’s faster than driving to the Chippy for takeaway too!!

If you have access to activated yeast, bread flour and an oven, you need never buy frozen pizza again. Away with the tasteless cardboard commercial stuff and its hidden chemical nasties, embrace the delectable possibilities this recipe offers. The hardest part of the process is deciding between soft or crunchy base .. plain crust or decadent cheesy, herbed goodness. Don’t save it just for flat pizza either .. this dough makes fantastic cheesy breadsticks, Pizza cups .. even wonderful desserts. Stay tuned and I’ll fill you in on these treats.

I have had some spectacular failures cooking calamari in the past .. to the point where I agreed with Grandad when he declared that he would rather eat old tyres. A couple of times a year Grandad would drop a fishing net on the other side of the reef so he could top up his store of smoked fish.

Along with the garfish, snook and tommy ruff, he’d snare gummy fish and squid .. which usually wound up cut up as fishbait. I thought squid were fascinating little critters .. even after I’d had to scour ink-dyed skin.

I owe the Fairy Princess an apology. During her last visit she helped me throw together an enormous plate of Spaghetti and Meatballs. As we all tucked into the steaming pile I promised her the how-to instructions .. an undertaking that somehow got lost among the myriad other tasks-in-waiting. Sorry Hon .. here t’is.

Although this is an “instant” dinner, I try to keep my inner health-nut somewhat happy by using the best quality beef chepapchichi that I can get. I fry in a shallow, flat pan with either a spray of oil or just enough rice-bran, peanut or grape-seed oil to grease the bottom. I drain the meatballs on greaseproof or kitchen paper to remove as much oil as possible.

Our local butcher has made a determined effort to cater to the very broad spectrum of tastes among our local immigrant populations. Among his specialties is a fabulous array of small goods, including many gourmet sausages. Normally I am not very keen on sausages, placing them firmly in the class of almost-foods to which instant soup, pot noodles and fruit straps belong.

A delicious and welcome exception to this are the spicy Baltic favourites; chevapchichi. This is a kind of skinless sausage made from coarsely minced real meat squashed into 10cm long “chip” shapes. This makes them really easy to cook on a grill or BBQ as they brown evenly. Their skinlessness has found them dubbed “Naked Sausages” by the Junior Sorority.
