Feeling a little under the weather? Needing something cool and refreshing to beat the heat? I have you covered. This cordial is delicious, refreshing and packed with andioxidantss. Perfect topped with chilled water or soda, even more perfect topped with ginger beer. I’ve even been known to use it as the beginnings for some pretty amazing cocktails. Use the freshest beets you can get to maximise the nutritional boost .. and don’t forget to wear gloves unless you really like magenta hands!!

Makes 6 – 8 cups/1.5 – 2l cordial

  • 200g/7 oz fresh beetroot (1 medium)
  • 6 large lemons
  • 200g/7 oz/¾ cup (or to taste) golden caster/superfine sugar
  • 2 cups water

Stir sugar into water in a large saucepan over low heat. Heat gently, stirring constantly, until sugar dissolves. Remove from heat and allow to cool while you prep the other ingredients.
Peel and finely grate beetroot.
Juice the lemons, reserving as much pulp as possible. Remove any seeds.
Pour the sugar-water into a large (preferably glass) jug. Stir in the lemon juice/pulp and grated beetroot.
Cover and refrigerate for at least one hour.
Strain through muslin or a sieve. Discard pulp.
Served mixed to taste with cold water, apple cider, ginger beer or soda water
