Let the spicy fragrance of this tasty, tender dish carry you off on a culinary journey to the Kasbah. Traditionally this would be cooked over coals in a tagine, an earthenware pot with a distinctive conical lid. Lacking a fireplace in my kitchen, I have adapted the original recipe for a slowcooker/crockpot. Served with couscous or burghul to soak up the juices, salad or roasted vegetables and some hummus and flatbread it makes an easy, tasty and nutritious feast. It is also much better the next day, when all of those exotic flavours are well combined.

Ras el Hanout varies from region to region in the North of Africa and is used as a basis fro everything from braised dishes to dips to dry rubs for meat. This is an easy version;

These light, fluffy scones pack quite a flavour punch, tangy cheese, sweet onion and warm cayenne pepper to Accompanying a roast or stew .. even just on their own fresh from the oven. Served with salad and stuffed with chutney, cold baked or smoked meats and a little fruit paste for a delicious light meal. Drizzled or dunked in gravy as a snack.  Try substituting fresh coriander leaf for the parsley for an aromatic twist to the flavour.
