Simple and tasty, my two favourite kinds of food. I make batches of large skewers for family BBQs and potluck shared dinners with friends. The OOOOs and AAAAHs that greet a platter of “cocktail” sized ones served with a colourful selection of sauces and dips is very gratifying.  Try Guacamole, Sweet Chili Sauce and a selection of colourful pesto. Don’t forget the Waldorf Salad!!

The vast majority of our circle are outright carnosaurs (or at least omnivorous), so I am always careful to pay attention to those with different dietary preferences.  My vego friends (what ever variation that may take) tell me that they all-too-often get short shrift in the menu planning. Ever been to a restaurant where the Vegetarian option is “a plate of mixed vegetables” or “a salad”? Bo-o-o-orrr-ing. Who wants to get stuck with a side dish while everyone else is feasting on a carefully planned, prepared and balanced meal? Unless you really hate mushrooms, this is a wonderful option. Easy to cook, aromatic, nutritious and satisfying without any animal products (makes a hell of a stuffing for pumpkin, squash or peppers too). Best of all is the amazing, complex flavour.  All nutty, earthy and very unsubtle mushroom. Fungophobes need not apply 🙂
