Choc Chip Cookies

I don’t think you need an explanation of Choc Chip Cookies. They are an great favourite with grown ups and not-so-grown-ups alike. For me they are comfort food.  I enjoy the process of making them. I grin happily wjen family and friends gather as the siren song of fresh cookies permeates the house with the smell of them baking. I also rather enjoy eating them 🙂

Makes about 3 doz

  • 250g butter
  • 1/2 cup castor sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla paste (or 2 tsp vanilla essence)
  • 2 eggs
  • 2 1/2 cups plain flour
  • 1 tsp bicarb of soda
  • 200g choc chips
  • 1 cup crushed peanuts

 

Preheat oven to 170C. Thoroughly grease and flour 4 large biscuit trays with baking paper, or use baking paper to prevent the cookies sticking

In a large basin, beat together the butter, sugars and vanilla paste until light and fluffy.

Beat in eggs until smooth.

Stir all of the other ingredients together until thoroughly mixed.

Fold the dry ingredients into the butter mixture. I normally use my hands for the last part of this process because it ensures everything is mixed thoroughly.

Form walnut sized balls of dough and place them on the prepared biscuit trays. Allow a little room for spreading.

Bake for 10 – 12 minutes or until golden brown. Turn out onto a rack to cool. Store in an airtight container.
