Death by Chocolate. What a way to go!

Once upon a time I set out to make choc muffins and they were dry and awful. We’ve all done it. Forget to add the extra drop of milk, or overstir the mixture. One or all of the impatient offspring opens the oven door at exactly the wrong moment or you just make too many and they go stale before they are eaten. This is the perfect excuse to whip some cream and mousse so you can enjoy this decadent dessert. This is not for the fainthearted or the dairy intolerant. I got the inspiration from the super rich Black Forest Gateau, so it is far more “substantial” than “trifle’ 🙂

Chocolate Roughy Muffins

These are rich, chunky muffins that are surprisingly light in texture. A firm favourite here with adults and Jonior Sorority alike.  I often make them for school fetes or drop in visitors. They are also full of nuts and nut oil, so if you have any sort of issue with nuts, don’t even try to smell them. As per usual I use raw sugar for the slightly caramel flavour, and wholemeal flour for a fibre boost.
