Last Yule I posted the how-to for Mulled Wine, glossing over port in the process and barely mentioning Ported Pears. As this particular libation is a favourite for ’round the campfire or indoors on cold Winter evenings, that seems a little dismissive. The fruit that is so beautifully poached has its own special place in Winter menus here. It’s devoured with custard or Angel Food while still piping hot. If it lasts long enough to cool down, I make it into a sweet, aromatic pie.
