I remember my Aunt making Angel Cakes for family occasions. Birthdays, Anniversaries or Sunday post-church gatherings she would present a tupperware container full of fluffy vanilla cupcakes, stuffed with jam and cram and finished with powdered sugar. I’ve taken her tradition and my new-found love of snickerdoodles and kind of smashed them together. It occurred to me that cinnamon, apples and bacon is a marriage made in heaven .. et voilà!!  Snickerdoodle Angels 🙂

There are distinct nutritional benefits from eating whitefish such as Flake, Hake and Tilapia. They are packed with phosphorous, selenium, zinc and magnesium as well as B Group vitamins, especially B12. They are also very often cheaper than their darker, oilier cousins, but are (sadly) usually sold frozen, a process that ruins the soft, delicate texture of the meat. At the market today I found some delightful, super fresh Flake (shark) so I pounced on it with glee. This is my favourite, low fuss, low mess way to cook it .. and it’s faster than driving to the Chippy for takeaway too!!

Beloved has a secret, guilty pleasure. He watches “Barbecue Pit Masters” when he thinks we are all busy.  Not that I blame him, fire and a slab of beautiful meat strikes a primal chord in all of us. I set out to reproduce some of the delectable dishes I’d seen him drooling over. Lacking a smoking pit, or a full day to pamper and fuss over the slab of meat I brought home from the Butcher, I cheated. The results would have a Pit Master sniffing disdainfully at my claim to Barbecue Ribs .. but I bet they’d come back for seconds once they’d tried it. Beloved certainly did 🙂

One of the real joys of live-streaming cooking is answering viewer challenges. Experimenting and researching food combinations I’d not previously considered has taught me a great deal about how food and the human body works. I get to play .. and learn in the process. Were it not for one such challenge, I may just have saved my German Volkhorn bread for toast .. and Leberwurst and Walnußkase .. anyway (*cough*) I’d never have discovered this gem. The Pork is nice, especially with roasted pears, but the stuffing is a whole ‘nother level of bliss. Rich, nutty and satisfying, without blowing my blood sugar through the roof. Definitely try this at home 🙂
